Carrots.  Bake into a cake, crunch it with some ranch, or cook them up.  The carrot is healthy and tasty!  If you are hosting Eater dinner, or need to bring a dish for the family dinner, here is an easy and YUMMY carrot dish recipe that is crowd pleaser.

Ingredients:

  • 12 large Fresh Carrots (washed and pealed)
  • 2 tbsp Honey (any kind of honey you like)
  • 1 tbsp Fresh Garlic (minced)
  • ½ cup Butter (non-salted)
  • Olive Oil (just enough to coat carrots)
  • Spices (salt, pepper, rosemary, thyme) *you could also add a little cinnamon and ginger

 

Directions:

Pre-heat oven to 400º

Wash and peel carrots, cut length wise into long strips.   Add to a mixing bowl and drizzle olive oil, salt and pepper over carrots and mix well (you can use your clean hands to help mix).

Take parchment paper and line a cookie sheet, and arrange carrots onto sheet.

In a medium saucepan over low heat, add in butter until melted.  Stir in honey, garlic and rosemary. Keep on heat until minced garlic is softened.

Pour glaze over carrots and place in oven until carrots are caramelized approx. 30 mins.

Remove from oven place in serving dish, garnish with thyme and serve.  ENJOY!
